3 baby white potatoes quartered
1/2 small red onion diced
3 celery stalks chopped
6 hardboiled eggs roughly chopped
4 slices of bacon cooked and chopped
3 green onions diced
2 avocados chopped
1 cup mayo
1/2 cup plain Greek yogurt (Non-Fat)
2 tablespoons apple cider vinegar
Garlic powder 1/2 tablespoons
Salt and pepper to taste
1 tablespoon Dijon mustard
1/4 teaspoon smoked paprika, it’s optional
How to prepare Salad
Put all potatoes in a large pot and fill water into it. Close the pot and boil potatoes up to 5-8 minutes until fork-tender (but don’t overcook). Run potatoes under cold water in a colander. Set aside to dry slightly. Once the liquid has drained, place potatoes in a large bowl. Place the potatoes into a large bowl after the liquid has drained. Mix celery, red onions, eggs, green onions, avocados, and bacon to the bowl. You can skip the egg if you don’t like it. Whisk together mayo, mustard, garlic powder, Greek yogurt, vinegar, salt and pepper, and paprika- all pour over the mix of potatoes. Cover that you mixed into the bowl, and wait for it at least one hour. If you are preparing this potato salad before taking the food or dinner and not plan to serve after one hour, and then it is recommended that avocados keep reserve until the end.
